Carnation’s Dog Mountain Farm has invited Earth & Ocean chef Ryan Loo to cook at their upcoming Farm Dinner on Saturday, June 25. True to his Hawaiian roots, Chef Loo is rocking it out Luau-style, using Dog Mountain’s fresh, in-season Pacific Northwest bounty. Wines from Tefft Cellars to accompany.
The menu includes:
Sweet onions, smoked goat and salmon and Hawaiian salt
“Oysters and pearls,” Tomato essence, kaffir lime, lemon and soy pearls
Mini kalua goat “lau lau”
“Squid luau,” kale and coconut milk
“Lomi” salmon with sweet onions
“Cherries jubilee,” Goat cheese and lemon panna cotta and tarragon
