Earth & Ocean chef Ryan Loo’s desserts are stunningly delicious


Diners come to Earth & Ocean for the restaurant’s playful spin on classic dishes that explode with color, and tantalize the taste buds with interesting flavors.

Chef Ryan Loo bring his personality into play by incorporating international spices like curry, dried chilies, flavored salts, lavender and even tropical essences with the seasonal and indigenous ingredients of the Pacific Northwest.

Earth & Ocean chef Ryan Loo debuts at Dog Mountain Farm


Carnation’s Dog Mountain Farm has invited Earth & Ocean chef Ryan Loo to cook at their upcoming Farm Dinner on Saturday, June 25. True to his Hawaiian roots, Chef Loo is rocking it out Luau-style, using Dog Mountain’s fresh, in-season Pacific Northwest bounty. Wines from Tefft Cellars to accompany.

The menu includes:

Sweet onions, smoked goat and salmon and Hawaiian salt

“Oysters and pearls,” Tomato essence, kaffir lime, lemon and soy pearls

Mini kalua goat “lau lau”

“Squid luau,” kale and coconut milk

“Lomi” salmon with sweet onions

“Cherries jubilee,” Goat cheese and lemon panna cotta and tarragon

Looking to woo? Head to the W Seattle for Earth & Ocean’s “Be My Valentine” dinner on Friday and Saturday, February 11 and 12.

Highlights include:

  • Carrot Ginger Potage with Taggiasca Olive Panzanella and Feta Foam
  • Foie Gras Terrine with Smoked Prune, Banana Croquette and Cocoa Balsamic Gastrique
  • Eye of the Rib Eye with Beluga Lentils, Horseradish Jus and Truffle
